Ui's Gluten-free Rice Pizza
It’s been over a month but I’m back!
Today, I’ll be introducing you to my own recipe which is Gluten Free Rice Pizza.
Before giving you a brief description of my recipe, I’ll explain what Gluten-free is.

A gluten-free substance does not contain gluten, a protein found in cereals such as wheat, and which some people cannot process in the intestine.
Ex of gluten-free ingredients:
Rice
Whole grains (some); A select few whole grains contain gluten, while the rest are naturally gluten-free. It's important to check food labels when purchasing whole grains.
Tapioca
Oats; Pure oats are gluten-free and safe for most people with gluten intolerance. However, oats are often contaminated with gluten because they may be processed in the same facilities as gluten-containing grains like wheat, rye, and barley.
Quinoa
Now onto a description of my recipe. . .
This dinner dish is really easy to make. I recommend you to make this when you want to order pizza but you have leftover rice that needs to be consumed. They are healthier and lighter than the regular pizza since they contain less milk and no eggs, and the toppings are low-calorie.
For example, I added mushrooms as toppings which are a rich, low-calorie source of fiber, protein, and antioxidants that have many health benefits. On the other hand, if you were to eat pepperoni pizza, it is loaded with calories and fat.

One cup (65 grams) of raw enoki mushrooms contains 24 calories. They are a good source of fiber and rich in B vitamins.

Ingredients:
- cooked rice (130 grams or more depending on how much you want to eat)
- shredded mix cheese (20 grams)
- brown mushroom (1)
- enoki mushroom (1)
- black pepper
Materials needed:
- oven
- baking pan
- parchment paper
- bowl
- kitchen scale
- cutting board
- knife
Directions:
Measure the amount of rice and cheese. Then, preheat the oven to 180℃. Line a baking pan with parchment paper.
Next, cut the mushroom and enoki into small pieces. I have found out that the more you put different kinds of mushrooms, the better they taste. After that, put the cooked rice onto the parchment paper and make a circle shape or any shape you want your pizza to be. For the thickness, you can choose whether you want to make it thin and crispy or thick.
Finally, decorate your rice pizza with cheese, mushroom, and enoki. If you have it, you can also put parsley on top. Then flake some black pepper on top of the pizza.
Once the oven is preheated, slide in the baking pan that has your rice pizza on and set the timer for 10 minutes. The cooking time may vary depending on the thickness of your pizza.
They are best eaten right away with nothing on top but if you need more seasoning, you can flake some salt.
Overall thoughts:
You can arrange this recipe by adding different kinds of mushrooms or adding sausage or any other toppings that you like. Just put them on top of the rice and it’ll taste delicious!
